Food Trends for 2012

We're almost halfway through 2012, so we've got a fair idea about what are/ will be the food trends for this year.





1.Contrasting Flavours. The sweet and salty caramel that French chefs have loved for ages has set the base for this new trend. A boost was given to this sweet and salty flavour when Starbucks and Häagen-Dazs started using caramel in a variety of their products. Other foods exhibiting the contrasting flavour scheme are bacon candy and chili/ginger infused ice creams.

2. Nose to Tail Dining. Nose to Tail Dining was previously a trend only followed by Eskimos who utilised every part of the body of the animals they killed. Due to ethical reasons Nose to Tail Dining is picking up all around the world. Pork is used very often in this type of dining. Slow cooked nose and pork tongue are finding their lovers around the world. Towards the tail, bacon can be used in every meal, including desert.

3. Home Cooking. A trend that is rising due to rising food prices and a rise in a number of home cooks who are wiling to experiment with ingredients and cuisines. This trend has also been aided by avid watchers of cooking shows who try the recipes at home instead of going out. I will help this trend as well by posting recipes on my blog in the near future. 

4. Chips Made From Unusual Vegetables. The crunchy and universally accepted texture of chips make it a popular snack. Food enthusiasts are now experimenting with the ingredients used to make chips. Potatoes are generally the only vegetable related to chips. Plantain chips are popular in India and have been consumed by Indians for more than a century. Vegetables like kale, eggplant and lotus root are being used as well. Zucchini chips would make a good garnish for a risotto.

The Bombay Life

Living in Bomby or Mumbai as its now called for my whole life of 16 years I have been exposed to a wide variety of foods ranging from street food to fine dining. Mumbai is probably one of the few cities in the world where we can enjoy food from street side vendors, a cafe, a mid range restaurant, a fast food joint and a five-starred hotel, all within a 2 mile radius.

Being a teenager, there has been a lot of aimless gallivanting and hanging out at carter road. For my readers who aren't from Mumbai, carter road is an area in the western suburb of Mumbai. Its a sea-side area that is filled with eateries. You can get all kinds of food possible from pizza's and kebabs to frozen youghurt and shaved ice. It has restaurants serving all kinds of cuisine from lebanese to chinese, crepes to momos. Apart form all these recently opened place, the real charm lies in the old cafes that have been operating since British times. One of the most iconic of these places is the gaylord restaurant in the city area.Other cafes that have been existing for a long time are cafe andora, which was previously the canteen for St.Andrew's college. Hearsche Bakery is another old cafe. Its known for its croissants and puffs.

Street food is a must try while visiting Mumbai. You can find a ''chat'' vendor at the end of every second street, but beware they are not well known for their hygeine.

Like any major city in the world, Mumbai too has a huge amount of 5 star hotels and michellin starred restaurants. The Taj Mahal Hotel by the Arabian Sea in Colaba is the most Iconic structure in the city. It was infamously attacked by terrorists in 2008.It houses wasabi and the golden dragon two of the highest rated oriental restaurants in the city.China House at the Hyatt and Zodiac Grill at the taj are few of the many highly rated fine dining restaurants in the city.


Words cannot express the diversity we witness in this city, a journey may not be enough, a lifetime
just about suffices. Mumbai a city of many people,
many  religions and many cuisines.

Songs not to listen to while cooking.

A lot of people who cook at home as a passion have a habit of listening to music while cooking. Here is a list of songs they shouldn't listen to while in the kitchen.

Burn It Up- R.Kelly. You certainly wouldn't want your food to burn up as well,would you?

Pressure- Alex Kenji, Nadia Ali and Starkillers. Stay calm while cooking, being under pressure doesn't help, at all.

Strange Clouds- B.O.B ft Lil Wayne. If your seeing strange clouds around you, check the oven or the stove, something is probably burning.

Sweat- Snoop Dogg. Keep a napkin close by, you want to get the saltiness in your food from salt or cheese or soy sauce or some other ingredient, certainly not from your sweat.

Pass Out- Tinie Tempah. Stay awake while cooking because if you pass out your dish fails.

She Doesn't Mind-Sean Paul. She may love you, but dude, if you serve her something disgusting,she is going to mind.

The Future

The Future of Indian gastronomy is probably going to be dominated by a stark increase in international restaurants that are looking to capitalise on the Love for food that the Indians possess.

Following the trend set by Hakkasan and Yauatcha, Benihana is going to be the third international chain of oriental eateries to open store in India.The restaurant sung about by Big Sean in his song 'my last' is planning to enter India by late 2015.

Fast food chains such as McDonalds and KFC have been around for quite some time, a few other big names have opened outlets in India as well.
Taco Bell the world renowned Mexican fast food chain opened their first store in Bangalore last year.
Burger King, the eatery know for their, err, burgers have opened shop in Pune and plan to open more than 250 restaurants by 2018.

Starbucks has been planning to enter the Indian market for years now, They have finally partnered up with Tata coffee and will open their first outlet in September 2012.

All in all, we can expect to eat at more international restaurants that will be just a hop,skip and jump away from our houses. The future is looking delicious and probably unhealthy.
